TheRiceBowl: How to make Cajun Spice!

At the Windchimes Chinese, we take the time to offer you authentic Chinese cuisine but we also love to explore and incorporate other culture's flavors and techniques into our menu.   For instance, Our Pacific Shrimp is lighting battered shrimp laid onto a bed of fresh spinach and pasta all drizzled over with a cajun sauce. This delicious dish is a true Asian fusion style dish incorporating American Cajun, Chinese, and Italian cuisines.

Cajun cuisine comes out of Louisiana.  The history goes back to the French speaking Acadian culture who were deported from Canada by the British after the French and Indian War.  Because the landscape and weather was so different in Louisiana from Canada, the Acadian culture had to adapt their cuisine to what vegetables and spices were available.  Not to forget to mention, they were also influenced by the Spanish settlers that were also settling in Louisiana at the time.  Hence the spicy Cajun spices.

There are many spices found in Cajun Spice mixes, but the main ingredients are: bay leaf, oregano, bell peppers, black pepper, cayenne pepper, chili pepper, celery, garlic, onion, and parsley.
